I went into the Threshold settings and set the minimum run time for cool to 11 minutes. I also changed the overcool setting to .5 degrees so it cools .5 degrees more than the temp I set it to if the humidity is high. I think Nest was doing that automatically but Ecobee it has to be set. This was my solution as well.
