I have no idea why they vary in size so much in the MCU. Even in the comics, the only two Celestials that don't match the 2,000 ft. measurement are the dead Celestial that became Knowhere (the head is way too huge), and the other dead Celestial that became Avengers Mountain (because 2,000 ft. is not a mountain lol).
