According to the wiki, supposedly Ammonite crabs have a weakness to the crush attack style. However, sand crabs and rock crabs appear to have no specific weakness, melee or otherwise, at least according to the wiki. Is this just a lack of information and all crabs are weak to crush, or what?

Looks like mystics with chaos gauntlets is the winner here. I'm getting 100k xp per hour on crabs while alching in-between hits. The xp per hour is only 1-2k more than void mage though. So they're almost equal, but I am hitting higher with mystic and chaos gauntlets. Without alching, it's only 45-50k per hour.
