A vivisectionist gets grand mutagen at level 16 so if it's a party build that only leaves a single level with which you can dip into another class. So for a vivisectionist to get uncanny dodge they need to give up grand mutagen, which is not a good trade.

Rogues get a lot of feats to support TWF but Vivisectionist are usually strength based over dex and don't get the sort of bonus feat support rogues get.
