IMO, the best Dex/faith weapons are fast keen weapons buffed with electrify armament i.e. Shamshir or Nagakiba, but I get that buffing isn't everyone's cup of tea. I like the flame weapons the fire monks drop. The mace is pretty quick and makes short work of miners and claymen. I put flame of the redmanes on it.
