Oak/pine/maple more forgiving...there does need to be a 1-space gap between mature trees, but there can be smaller saplings immediately adjacent. They just only produce fruit in the harvesting season. What I do is buy, let's say fall harvesting trees, towards the end of spring, then plant them on the 1st of summer as they take all season to grow, and then have the whole harvesting season.
