If you want to go greatshield and spear the Warrior could be a sensible choice. And if going this route you might want to think about the Gargoyle Bident -- a strength spear. If you don't mind starting very fragile the Swordsman makes a lot of sense. You can find a lot of enemies using the Winged Spear in the Forest of Fallen Giants.
