You can't swap the caliber on a Maverick 88 with a barrel swap. That's true for most shotguns, actually. There is a lot more to it than just the barrel. They make sleeves/inserts where you can shoot different calibers out of the same shotgun barrel but your accuracy is shit. Imo it is more of a gimmick than useful.

Depends. The Mossberg 500/Maverick 88 have two magazine tube lengths. The Maverick Cruiser and Security models with the 7+1 capacity magazine won't accept the standard 500/88 barrels since the barrel screws into the end of the magazine tube. I don't think they make a longer barrel compatible with the 7+1 tube.
